Comté is a firm, unpasteurized cow's-milk cheese made from Montbéliarde or French Simmental milk, produced in large ~40kg wheels and aged in cool cellars for a minimum of 4 months, though quality wheels are commonly aged 12–24 months or longer to develop complex fruity, nutty and floral notes that vary by cave and season.
Made in small-batch village dairies called 'fruitières' (cooperative mountain chalets) across the Jura Massif in Franche-Comté, where each fruitière typically uses milk from a limited number of local farms, then sends wheels to specialist affineurs for extended cave-aging — a model that preserves strong terroir variation between producers.
Comté is France's top-selling AOP cheese by volume, with broad demand across French domestic retail as well as strong EU, UK and US gourmet export markets; extended-aged 'vieux' and cave-selected wheels occupy a premium tier marketed to cheese specialists and fine-dining buyers.
Protected as AOC in France since 1958 and as AOP under EU law since 1996, governed by the Comité Interprofessionnel de Gestion du Comté (CIGC), which sets rules on cattle breed, feed (no silage), maximum herd density, fruitière-scale production and minimum aging. Export requires standard EU/French raw-milk cheese health certification, which can involve additional scrutiny in markets restricting unpasteurized dairy imports.
