Parmigiano Reggiano is a hard, granular cow's-milk cheese made from raw milk with no additives, aged a minimum of 12 months under Consorzio rules, though premium 'stravecchio' wheels are aged 24, 30 or 36+ months to develop pronounced tyrosine crystals, deeper umami and a drier, flakier texture.
Produced exclusively within a legally defined zone covering the provinces of Parma, Reggio Emilia, Modena, Bologna (only the area west of the Reno river) and Mantova (only the area east/south of the Po river), by roughly 300 authorized dairies under strict Consorzio del Formaggio Parmigiano-Reggiano production rules.
One of the world's best-known and most exported Italian cheeses, with strong demand from gourmet retail, food service and industrial culinary users across the EU, US, and globally; extra-aged (30–36+ month) wheels occupy a premium niche marketed to connoisseurs and fine-dining buyers.
Protected as a DOP (Denominazione di Origine Protetta) under EU law since 1996, enforced by the Consorzio del Formaggio Parmigiano-Reggiano, which fire-brands every wheel with production date, dairy code and DOP marks. Export requires standard EU food-safety/health certification; genuine DOP wheels are individually traceable via their fire-brand markings, guarding against widespread 'Parmesan' imitation product sold outside the EU.
