Detailed study

Jamón Ibérico is dry-cured ham from Iberian pigs, a breed native to the Iberian Peninsula prized for intramuscular fat infiltration that gives the cured meat its signature marbling and nutty flavor. 'De Bellota' denotes the top quality tier, meaning the pigs finished their lives free-ranging in oak forests (dehesas) feeding primarily on fallen acorns (bellotas) during the montanera fattening season.

Provenance & producer

Produced in Spain's dehesa regions — principally Extremadura (Guijuelo, Jabugo), Andalusia and parts of Salamanca and Huelva — where free-range Iberian pigs graze extensively on acorns and pasture grasses before curing for 24–48 months. Spain's official Iberian ham standard (Real Decreto 4/2014) codifies four labelled quality tiers by color, with black label ('etiqueta negra' — 100% Ibérico breed, acorn-fed/free-range) the top grade.

Market & pricing

A premium Spanish gourmet export staple with strong demand across the EU, US, Middle East and increasingly Asia; 100% Ibérico de Bellota (black label) commands the highest prices in the category due to limited dehesa acreage, slow multi-year curing and the acorn-season feeding constraint that caps annual supply.

Compliance & export

Governed by Real Decreto 4/2014 enforced by regional Denominación de Origen Protegida bodies (e.g., DOP Jabugo, DOP Guijuelo, DOP Dehesa de Extremadura, DOP Los Pedroches); labels must state breed purity percentage and feeding regime. Export requires standard EU/Spanish veterinary health certification plus compliance with the importing country's pork product rules.
