Wild Arctic cloudberry preserve

Foraged by hand from wild bogs in Finnish Lapland during a fleeting late-summer window, cloudberries — 'the gold of the Arctic' — are simmered into a preserve prized for their honeyed, faintly tart, almost caramel-like flavour.

Detailed study

Cloudberry (Rubus chamaemorus), known as 'hilla' or 'lakka' in Finnish, is a low-growing perennial of Arctic and subarctic peat bogs that ripens from red to a translucent amber-gold when fully ripe — the stage prized for eating and preserving. It is included in Slow Food's Ark of Taste as a distinctive regional product; the berry cannot be commercially cultivated at scale and remains almost entirely wild-harvested, giving it a genuine scarcity value.

Provenance & producer

Finnish Lapland's cloudberry harvest follows Finland's 'everyman's right' (jokamiehenoikeus), which allows anyone to forage wild berries on most land regardless of ownership; harvesting is concentrated in a short window in late July-August and is done by hand due to the fragile, low-growing plant. Local cooperatives and small Lapland producers (e.g. Arktiset Aromit ry, the Arctic Flavours Association) coordinate collection, quality standards and processing into jams, liqueurs and frozen product for both domestic and export markets.

Market & pricing

As a genuinely wild, weather-dependent, non-cultivated crop, cloudberry supply is volatile year to year and commands a premium versus cultivated berries; artisan Lapland jam retails around EUR 72/kg-equivalent (Arctic Delice), reflecting scarcity, labour-intensive hand-picking, and strong Nordic/tourist demand for authentic regional products.

Compliance & export

No DOP/PGI status found for Finnish cloudberry specifically, though Arctic Flavours/Arktiset Aromit promotes quality and wild-origin certification for Lapland berries generally. As a processed fruit preserve, EU food-safety and labelling rules (ingredient list, allergen statement, sugar content) apply for intra-EU and export sale; US import requires standard FDA food-facility registration and compliance with jam/preserve labelling standards.

A working reference photograph is in place, captured from a freely-licensed Wikimedia Commons source (File:Rubus chamaemorus close-up.JPG). Clearly identified as Rubus chamaemorus (cloudberry); appears to be a close-up of the plant/berry rather than a preserve, so it illustrates the raw fruit source rather than the finished jam. Treat this as a placeholder for marketing purposes: exact licence terms should be re-verified on the Commons file page, and original producer photography is recommended before final trade use.
